Chocolate & marshmallous cupcakes

A few days ago it was my boyfriend’s birthday and as he was delighted with the chocolate & marshmallous cake that we tested at the Nomada Market so I decided to make it at home to celebrate it though I turned it into cupcakes. I think the flavor was more or less similar although not as tasty as Coconat Bakery Cake.  I have to improve them!  To make the cupcakes I relied on this recipe from Entre Chiquitines.

Chocolate & marshmallous cupcakes

Ingredients (for 6 cupcakes)

125 grams of butter
1/3 cup cocoa powder
2 eggs
1 teaspoon vanilla essence
3/4 of icing sugar
1/2 cup flour
A pinch of yeast
1/2 tablet of cooking chocolate
150 grams of small mashmallous
Cereal pearls to decorate

Chocolate & marshmallous cupcakes

Melt the butter and mix with the sugar in a saucepan. In a separate bowl sift flour, baking powder and cocoa. Then add the mixture of butter and sugar, eggs and vanilla essence and stir. Chop half the cooking chocolate and mix it with the above.

Divide the mixture into cupcakes molds and put them into the oven preheated to 180 degrees previously. Bake for 20 minutes or until they are made.

When ready remove from oven and let them cool for 10 minutes before removing from the molfd. Melt the remaining chocolate in the microwave and place a small amount of it on each cupcake. Put a few marchmallous and pearls to decorate the cupcake before the chocolate hardens. They are more tasty if served warm so you can warm them for a few seconds in the microwave before serving.
